Soya gratin & Hummus


Filling

1/3 broccoli head
3 stalks of spring onion
1 big tbs panang curry paste
about 150g soya strips
3 tsp vegetable stock powder
1/2 cauliflower head
400g canned tomatoes
coriander spice
5 garlic cloves
canola oil

- Oil up a cast iron pan and fry up the onions and curry paste
- Add the broccoli and the soya strips (that you have had in boiling water for a while)
- Put in the cauliflower and spices
- Then add the tomatoes and garlic
- Let it simmer for while


Topping

1 natural tofu
5-6 garlic cloves
1/2 dl canola oil
2 tps vegetable stock powder
water

- Put in the blender and let it mix up to a smooth paste!
- Put the filling in an oiled pan and add the topping
- Have it in the oven for about 20min in 250°C
- Enjoy!

Hummus

400g chickpeas
3 big garlic cloves
1/3 lemon (juice)
2 tps vegetable stock powder
olive oil
water
1 tbs tahini

- Mix it! Enjoy!

Cupcakes!


So my grandma turned 90 (bloody hell that's awesome!) and I baked some chocolate cupcakes with mocha frosting and chocolate nibs. The recipe is not mine and I will post it up when I remember where I found it. But it was the best cupcakes this far. I can tell you one thing, it contained loads of coconutmilk.

A plate of:


So I made this for dinner today and my family. I really don't have any recipe for this. But I can tell you shortly what is on the plate. Steamed savoy and brussel sprouts and some vegan parmigiano and herbal salt on them. Quinoa and quinoa/rice pasta. Soy strips with a really good curry and coconutmilk, loads of garlic and so on. Avocados with lemon and herbal salt, a green salad and sauerkraut. It was good!

Lovely breakfast

Soy yoghurt
Black sesame seeds
Flax seeds
1 apple
Blueberries
Cloudberry jam (home made)

- Blend it all together and then it's ready to eat!
- Refreshing and deliciouse, enjoy!

Lentil stew

The saltmixture and the other mix, directly from Italy!

Lentil stew
(italian style)

about 200-300g red lentils
2 onions
6 garlic cloves
1 pepper
2 tomatoes
olive oil
vegetablestock powder
italian spices: saltmixture & chili,garlic, herbmixture
herbes de provence
oregano
tofutti: garlic&herbs 2 tbs
water

- Fry up the garlics, onions and lentils in oil
- Add the tomatoes and the pepper
- Pour in the water and the spices
- After a while add the tofutti and let is boil until it's done
- Enjoy!

Noodles&Wok


Yes, I have been busy as fuck. Sorry for not having time to do anything here!
But today I made some deliciouse food. Black rice noodles, vegan parmigiano, tofuwok with zucchini, tofutti, some spicemix from italy and so on. I promise I will update more in the future!
